Yesterday, managing director George Kailis announced Kailis Hospitality Group (KHG) would open a seaside brasserie and grill, named Gibney, at 40 Marine Parade.
Gibney will be the hospitality tenant at Curtin Heritage Living’s Waterfront Cottesloe development on the site at the corner of Marine Parade and Gibney Street.
Mr Kailis said the high-end restaurant would accommodate 160 patrons, describing the venue as luxurious Californian country club meets Parisian hotel lobby.
KHG engaged East Fremantle-based architectural and interior design team Rezen studio for the multi-million-dollar project.
Mr Kailis said Gibney could be the first and last hospitality offering in south Cottesloe, with the most recent venue being a tearoom at the Dutch Inn in the 1940s.
“We have a tremendous opportunity to deliver a landmark restaurant in one of the state’s most important locations,” he said.
“The premium dining sector is almost non-existent in WA, yet in almost every capital city around Australia and the world there are landmark venues of this nature.
“In recent years we have seen an explosion in the neighbourhood wine bar market with some exceptional offers.
“With that market being more than catered for, I wanted to push in a different direction. We also operate in the casual space, so this makes sense for our stable of restaurants.”
KHG already operates The Shorehouse in Swanbourne, Island Market and Canteen in Trigg, and Kailis Fish Market cafe in Fremantle.
Earlier this month, Mr Kailis announced KHG would rebuild wellness store Magic Apple Wholefoods at the former Barchetta site at 149 Marine Parade.
Vegetarian-focus store Magic Apple opened on Barrack Street in the late 1970s and Mr Kailis acquired the WA brand in 2020.
The Town of Cottesloe chose KHG as the preferred operator of the site at a council meeting in May, after months of confidential talks.
Barchetta had been owned and operated by the King family, who bid farewell when their lease ended on June 11.
The town has published its business plan to enter into a lease with Olympia Hospitality, under KHG, for the mandatory consultation period until mid-July.
The business plan said KHG will be committing between $600,000 to $1 million to upgrade the Barchetta building.
Both Magic Apple and Gibney are expected to open in 2024, with the latter slated for a March launch.
