E’CUCINA head chef Herb Faust began his career with an apprenticeship at e’cucina and, as chefs do, moved around to secure further training. But after working for popular cafes and restaurants from Thredbo to Yallingup, including a stint on Kerry Packer’s polo ranch in New South Wales, Mr Faust has returned home to the kitchen he trained in.

“I learnt a lot from David Hamilton, he was the first head chef here,” Mr Faust says.

“It’s come full circle, it’s nice how everything has sort of fallen into place for me.

“I like it here. It’s really busy and the food here is quite simple.”

Mr Faust says he has not only learned from industry professionals but also picked up a trick or two from his Thai mother.

“You don’t have to use expensive ingredients to make a dish really exciting, often it’s all in the cooking method,” he says.

“I also think it’s very important not to over-process foods.”

In his first stint as a head chef, the past four months has involved a lot more staff training and motivating, but it’s something he enjoys.

“We have a pretty small kitchen but the guys here are really switched on.”
