The Commodore Hotel is continuing its commitment to the new Armada Bar and Grill opened recently in the east side of the city, on Hay Street.

The recently refurbished hotel has just named Bonnie Sulistyo as head chef for the restaurant.

Mr Sulistyo cut his teeth in Perth working at the Globe restaurant at the Parmelia Hilton under Cheong Liew, known as the ‘father of east/west fusion cuisine’ in Australia.

It was under Mr Liew’s stewardship that the Globe garnered much praise for its innovative, fusion-styled cuisine, a skill that has now taken him to the multi-award winning The Grange restaurant in Adelaide.

Mr Sulistyo has just released his new menu for Armada and hopes to continue the themes of innovation in his cooking with this latest challenge.

From Monday March 20, Must Wine Bar in Mt Lawley will spend a week going wild about Tasmanian wines.

Showing off the range of flavours that has made this cool climate wine region a rising star on international wine maps, chef Russel Blaikie (pictured) and his team will work through specially selected chardonnays, sparking wines, and of course the odd pinot noir for good measure.
