DÔME Fremantle’s chef Melissa Reitsema has been named the Unilever Apprentice Pastry Chef of the Year for WA.Judges praised Melissa for her work ethic, personal skills, cleanliness presentation and passion for pastry cooking.

Judges praised Melissa for her work ethic, personal skills, cleanliness presentation and passion for pastry cooking.
She has served her entire apprenticeship at Dôme Fremantle under the direction head chef John Earnshaw.
Melissa follows a long line of family members involved in pastry cooking. Her father, uncle and great uncle were pastry chefs and her aunty a professional cake decorator.

MEZZONINE, open 24 hours a day in King Street Perth offers an upmarket wine list to accompany its menu which includes borstch, Absolute vodka shooter, horse radish croute ($12), marinated salmon, sauterns, lime and green peppercorns, dill blini salad ($14.50), black bean and Thai spiced mussels, coconut and coriander ($14.50), honey baked salmon fillet, fricassee of shitake, asparagus and swet soy ($24.50), and crispy duck with pancetta, tutti frutti salad and spiced blood orange fritters ($24.50)
Accompaniments include Greek salad ($6), house salad ($5) and champ mash ($5).

Winemaker BRL HARDY collected eight trophies, 17 gold, 22 silver, and 52 bronze medals at the Liquorland National Wine Show in Canberra recently.
The wine show is considered to be the grand finale of the Australian wine show circuit and entrants are required to have taken out a trophy or medal on this years Australian and New Zealand major wine show ciruit.
BRL Hardy’s 1995 Arras pinot chardonnay won the Kit Stevens Trophy for the best bottle-fermented sparking white wine.
The 1999 Eileen Hardy chardonnay won three trophies including the Vintage Cellars Trophy for the best white table wine. It will be released in March.

HANSONS SWAN VALLEY is offering a New years Eve without the urban angst with a six-course meal served in the romantic outdoor setting overlooking the Swan River and neighbouring vineyards.
The food is prepared by Selina Hanson who was recently acclaimed as one of the top 10 chefs in Perth. She serves dishes such as roast snapper in a soubise sauce with young local spinach or fresh forest mushroom and roast garlic soup.
Also on the menu are braised oxtail in a rich port and fresh orange reduction with soft polenta and little Yorkshire puddings ($27.50), brioche, apple and butter pudding with toffee sauce and double cream ($9) and New Norcia fig and fennel bread with Ashgrove vintage cheddar and persina feta ($13.50).
