Must Winebar founder, director and executive chef, Russell Blaikie, is a leader in the hospitality arena. Born in Busselton Mr Blaikie has worked in some of the world’s best kitchens and is creating world class excellence at his Highgate winebar. He has worked for the Dorchester Hotel in London and was a director in Perth’s No 44 King Street. Must Winebar opened in late 2001 and employs 23 people. In 2003, Mr Blaikie won a Business News 40under40 Award.
