Phoenix centre tavern to cost $6m

Hospitality directors Brian Godfrey and St John Hammond will spearhead a tavern project for Phoenix Shopping Centre, which is undergoing a $40 million revamp.

An application to the Department of Racing, Gaming and Liquor shows FBW Phoenix Pty Ltd seeks a liquor licence for a pub at the potential redevelopment of the shopping centre in Spearwood.

Mr Godfrey and Mr Hammond are listed as directors of FBW Phoenix on an Australian Securities and Investments Commission document.

Mr Hammond has more than 35 years of experience in hospitality, and has focused on craft brewing and distilleries in the past decade.

He founded Indian Ocean Brewing Company in Mindarie and Flying Foam in Jolimont.

Mr Godfrey owns the Waverley Brewhouse, a pub and nanobrewery in Westfield Carousel shopping centre, and recently sold the Northshore Tavern in Hillarys.

The duo's project, dubbed the Phoenix Brewhouse, has an estimated cost of $6 million for the tavern building with $3.5 million budgeted for the fit out, the application said.

In September, the Metro Outer Joint Development Assessment Panel approved plans for the tavern to be build on the upper car park deck of the shopping centre.

"The shopping centre is currently planning a further two stage upgrades at a budget of $40 million creating [a] stage one 1168-square metre tavern site; an additional 1700sqm of lettable space; [and] a significant expansion of services and amenities," the application said.

"Tavern development works will commence in 2024 and are expected to be completed in mid-2024."

According to the application, the proposed tavern includes a nanobrewery and an external Skydeck.

“The premises is intended to accommodate 1050 patrons and will incorporate many stunning architectural features and superior fixtures, fittings and furnishings,” the application reads.

“The brewery will have the capacity to produce approximately 600 litres at any one time.”

The application said the venue would comprise 1,065 square metres of internal space across the ground floor and mezzanine, and 270 square metres of external area.
