Bailey Brewing to open in CBD, Dunsborough

Bailey Brewing Company has rapidly expanded its footprint with the brewery to open two venues in the coming weeks, including one in the CBD.

The Swan Valley-based company will open Bailey on the Terrace, a restaurant at Fraser Suites on Adelaide Terrace, this month.

The Bailey team will also open a Dunsborough venue in the coming weeks, taking over Clancy’s Fish Pub on Caves Road.

Bailey on the Terrace will be led by head chef Sean Calliste, who was mentored by Gordon Ramsay and has managed kitchens across the world.

Bailey Brewing Company chief executive Tony Williamson said the team was keen to take the opportunity when Fraser Suites was searching to outsource its food and beverage.

“It's born from a real relationship that I, as the CEO, have and the executive chef has with the general manager [at Fraser Suites], Alexis Hvalgaard,” Mr Williamson told Business News.

“It was just a great transition from the brewery we started four years ago to setting up a five-star opportunity in the city in the CBD with a bar we named GB’s bar after [founder] Geoff Bailey.

“If you've been to the brewery, it's very family orientated. We don't take party buses, we don't take tour groups or hen's nights and that sort of stuff.

“The next step for us was when this opportunity came along, is to do something a little bit different.”

A family business started by Geoff Bailey and his two sons, Steve and Dan, Bailey Brewing Company opened in the Swan Valley in late 2020. 

“At Bailey on The Terrace, we're bringing the same commitment to quality and passion for great food and drink and warm hospitality that has made the Bailey Brewing Co. a household name,” Geoff Bailey said.

“Our goal is to provide an authentic, quality dining experience that matches the sophistication of our location.

"Whether you're a local resident, a city worker, or attending an event nearby at the WACA, Langley Park or Optus Stadium, Bailey on The Terrace will offer a first-class experience without the pretension." 

Mr Williamson echoed Mr Bailey's comments, saying what made the Swan Valley brewery a success would be replicated in the five-star restaurant on Adelaide Terrace.

“For us, it's good food, good service, and a good time,” he said.

“We're keen to go on the back of what we're doing at the valley and provide people with a really good service, a really nice venue and great food.”

Despite gearing up for a CBD opening, Mr Williamson said Bailey Brewing Co set sights on a Dunsborough venue first.

“Four years ago, we didn't think we'd be opening something in the city … it's been a year and a bit in the making,” he said.

“The Bailey family's got deep roots in Dunsborough. They holiday there and they like their family getaways, so when this opportunity came up to purchase a venue down there, we jumped at it.

“It’s going to be a little bit different than Clancy's are at the moment.

“We're going to hopefully replicate what we do in this Swan Valley and bring a family more of a family element where the kids can have a play."

Bailey Brewing Co Dunsborough is scheduled to open during the long weekend in June.
